30 Minute Vegetarian


The recipe I chose is called Chickpea and Millet Cakes with Red Pepper Sauce. I tweaked it and left out the curry paste and substituted quinoa for the millet. It was quite good. My family especially liked the red pepper sauce which I also tweaked by adding a yellow pepper. (I love to add colour to my cooking). The recipe is from “30 Minute Vegetarian” by Rose Elliott. This is actually a vegan recipe. I really don’t think it can be done in 30 minutes. -Debra
