I made two casseroles for March. Both were from one of my favourite allergy free cookbooks – Cooking for Isaiah by Silvana Nardone.
Asparagus Risotto Casserole
Substitutions: 400g asparagus, cooking wine, brown rice-extra 30min cooking, chicken (addition). I’d make this one again.
Chicken Rice Tetrazzini with Mushroom Gravy and Mustard Crumbs
I also used cooking wine and brown rice for this so the recipe needed an extra 15 minutes for the rice to cook. I bought a rotisserie chicken from the grocery store. A delicious twist on a classic dish!
