Minestrone in Minutes is my version of this great fall dish. It was done in a little less time than I would have preferred, but it turned out to be just fine. This soup is colourful, hearty and from all reports (not just my opinion) delicious.
The recipe book I used is called “A Beautiful Bowl of Soup” by Paulette Mitchell. The photos in the book are really inviting and all the recipes are vegetarian with some vegan versions.
Everything I used was in season, onions, carrots, red potatoes, fresh parsley, etc. It really made a huge pot of soup so I will be giving some away.
